Burgundy excels at washed rind cheeses—just look at funky favorite Époisses. L’Affiné au Chablis boasts the same expert French craftsmanship and complexity, but with a little less of a pungent punch. True to its name, this cheese gets bathed in dry, citrusy Chablis, creating a wrinkled, gold-tinged rind that gives way to a silky soft center. Lightly floral with apricot notes. Pair it with another French classic, Jambon de Bayonne, for layers of flavor in one savory bite.
The wrinkled, brainy rind of L’Affiné au Chablis is known as a geo rind, which is formed by the yeast-like fungus geotrichum candidum.
Washed rind cheeses get washed throughout the aging process in either a brine solution or alcohol (like Chablis). They often have strong aromas and red- or orange-tinged rinds.
Chablis is a white wine from Burgundy made with 100% chardonnay grapes. It’s dry and light-bodied with floral, citrus, and mineral notes.
